TPC SUMMERLIN'S CHOCOLATE TORTE WITH GUAJILLO CHILI

Ingredients

2lb Chocolate
1lb Butter
16ea Egg yolks
8oz Sugar
24ea Egg whites
12oz Sugar
1-2tbl Ground Guajillo Chili

This recipe can be broken into three components.

1) Melt the chocolate & butter.

2) Make a sabayone with the yolks & sugar.

3) Make a meringue with the whites & sugar.

Now it gets assembled.

1) Fold the sabayone into the melted chocolate.

2) Fold the meringue into the chocolate sabayone.

3) Fold in the guajillo

4) Place in individual baking dishes and bake at 350 for 20-30 minutes.
